Menu Plan Monday
Today is one of THOSE mondays. The Mondays you dread coming because you know you’re already going to start the week off on the wrong foot, and so who knows how much you’re going to accomplish in the coming week, so why bother? Can anyone relate? We’re recovering from our sick day yesterday- so the house is a wreck and I don’t really care. I thought I would post up my menu for the week though- because I am excited about that.

So here goes in no particular order (excepting for Wed and Thurs meals)….

Chicken Pot Pie, salad

Frito Pie (w/stew tomatoes in the chili, steamed broccoli, cheese)

Wednesday meal - out to eat at Red Lobster with a gift certificate my hubby got for his birthday- yummy for him, gross/tolerable for me

Valentines meal- Company Lasagna, green salad (w/ sliced almonds, dried cranberries, and feta) fresh steamed green beans, Black forest Trifle for dessert (chocolate cake with chocolate pudding and cherry pie filling)

Homemade Pizza, raw veggies w/ ranch dressing

Meatloaf, mashed potatoes, peas and carrots (didn’t get to this last week)

Orange Chicken w/Stir Fry veggies over rice
Sounds good right? :-) I went shopping today, so I’m all ready to make these yummy nutritious meals for my family. Head on over to Laura’s for more scrumptious ideas.

I have attached the url (my name) for the Brazil Nut Bars recipe. It is from the Ultrametabolism book. They are delicious, and wheat and sugar free!
