Apricot Chicken and Sweet Potato Doughnuts

With fall here, I have been making alot of fall related dishes- mostly chili(and frequently-what a patient hubby I have), pumpkin cookies, pumpkin pie, pumpkin pancakes, and now these two…one i have made before and LOVE, the other we just made this last week for a halloween party.

The Apricot Chicken is actually a Rachel Ray recipe- it’s super easy and super tasty. I usually serve it over couscous, with a steamed green veggie on the side

The sweet potato doughnuts are courtesy of Mrs Paula Deen- and there isn’t a stick of butter in them, (WHAT! no butter?!!?!) but they sure are tasty and worth it.

We did without the maple glaze and nuts- because we ran out of time, but it was still nice- not too sweet. I thought since there were sweet potatoes in the dough that they might be more orange, but they weren’t (to my sorrow) I guess we could have added more orange food coloring for the effect, but once it gets fried that pretty much ruins it- so either way these are a winner in my book for that special fall treat.

(Note: I didn’t actually make these myself, hubby was kind enough to do that, but we did NOT need to fry them for the 2 minutes per side- it was a LOT faster than that- we even had a thermometer. So just watch for them to be golden brown and delicious)
