Menu Plan Monday...late again, and getting a toddler to eat what we eat

I was going to paste this yesterday- but just as I was going to publish my internet froze up and I had to force quit. Bleh! It was a good post too. I'm going to try and duplicate it.

So I haven't posted on MPM in a while- not that we haven't planned or eaten anything- I've just been making some adjustments and experimenting and reworking things.

I've been working on getting my toddler to eat what we eat, so as to avoid becoming a short order cook, and also to hopefully get some healthier things in to him. If I let him, he would live off of milk, noodles and fruit. At least until he got bored of it.

Menu Plan Monday

This week should be fun. Jonathan is doing really well with potty training and we are all so excited about that. He should have it down pat within the next week. So my meals this week are pretty easy/no fuss. If you came to my house right now you could witness the tornado that has blown through since we jumped in to potty training. But I haven't been bothered by it since we have been focused on what we need to be focused on.

Here's what we're having this week

  • Spaghetti w/meat sauce, Steamed Green Beans, Salad
  • Omelets ( with choice of tomatoes, green peppers, cheese, mushrooms, broccoli, carrots, cheese, salsa, avocado) toast, fresh orange slices
  • Soft Tacos ( w/choice of lettuce, tomatoes, cheese, salsa, olives, sour cream) Corn, Salad
  • Baked potato bar (we didn't get to this last week
  • Dinner at the ward activity (I hope-if not we'll probably have mac n cheese w/tuna and peas, side salad)
  • Homemade pizza, raw veggies
  • Dinner with our relatives

I'm also going to try replacing lentils (that have been cooked with taco seasoning) for the meat in the tacos (just for my portion and maybe jonathans- he doesn't really know the difference yet)

The power of 30 days, and some really cute aprons

This steve pavlina dude is unbelievable. I mentioned a while back about self discipline and how I'm working it in to my life (or not). I also mentioned steve and his website in that same post. Since I found his site- I have found myself frequenting it more and more. He is amazing in his zeal to improve himself and the life of others. One of the things he does when he wants to make a change is to try that thing for 30 days figuring that it's enough time to gather significant data to see if you want to stick with the change. If you decide that you don't want to- then you can always go back to the old way, but at least you made the effort. Read the articleto understand the logic better. It's really quite simple

My first green smoothie

I've always been interested in nutrition and healthy eating. Since I had baby boy back in November my habits have been less than ideal- specifically after dinner time. I could lay a lot of blame on my husband since he encouraged some of my "bad behavior" with eating ice cream every night after the boys go to bed. Up until recently ice cream was only an every so often occasion (for me at least)- but for some reason he would eat it every night and I decided that since I eat healthy 90% of the time that "just this little once wouldn't hurt"

Exercise...my way, redefined.

This morning I was able to attend the birthday celebration for the womens organization in our church. They served us a decent breakfast of hash browns, eggs, oranges and crescent rolls. We then were privileged to hear some beautiful musical numbers and listen to some speakers talk to us about nourishing our bodies, minds and spirits. It was a good reminder and couldn't have been more timely.
